Cow Appreciation Day 2013

For breakfast, we went to the Chick-fil-a on Seigen.

At lunch time, we went to Millerville because they were having face painting.

Fun Friday–Banana Chocolate Chip Waffles

I was hoping this stack of Banana Chocolate Chip Waffles was enough to feed my hungry bunch this morning. Thankfully, it was!

I upped the banana based on some of the reviews. I didn't have mini chocolate chips so I just used regular. It was almost too sweet when served with syrup.
  • 2 cups all-purpose flour
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 2 cups low-fat milk
  • 1 1/2 medium banana, mashed
  • 6 tablespoons vegetable oil
  • 2 large eggs
  • 1/2 cup mini chocolate chip
  1. Place dry ingredients in large mixing bowl and stir until mixed well. Add remaining ingredients and combine until well blended and smooth.
  2. Let batter sit 5 minutes before using.
  3. Preheat waffle iron.
  4. Use 1/2 cup batter per waffle and cook until done (approx. 2 minutes).
  5. Serve immediately.

Chocolate Friday & Fun Friday–Whole Wheat Chocolate Chocolate Chip Waffles

This morning I had planned to make chocolate chip waffles, but when I went to look for flour we didn't have any. But we did have a bag of whole wheat flour that I've never used. So I googled whole wheat chocolate chip waffles and stumbled across this recipe. Photobucket

Whole Wheat Double Chocolate Chip Waffles
  • 2 cups whole wheat pastry flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 2 tablespoons sugar
  • 1/4 cup cocoa powder
  • 1 cup skim milk
  • 1 egg
  • 2 tablespoons canola oil
  • 1/2 cup chocolate chips
Preheat waffle maker.

Combine all dry ingredients together, then add egg, milk and oil. If batter is too dry, add milk 1 tablespoon at a time, until it is wet but thick. Fold in chocolate chips. Spoon 1/3 cup batter into waffle maker, cooking for 2-3 minutes or until waffle is set.

I doubled the recipe because I wasn't sure how many it was going to make. I wasn't sure if the kids were going to like them or not since it was whole wheat, but I don't think they really noticed especially with the chocolate chips and adding syrup. They were a lot denser so Luke & Cameron didn't eat as much as they normally do.

Cinnamon Toast

I knew I was going to make cinnamon toast for breakfast this morning. So as I was drinking my coffee, I googled cinnamon toast just looking for some pointers on the oven temp. It's been a while since I had made cinnamon toast. I came across Pioneer Woman's blog post about cinnamon toast and I decided to try her version. It looked and sounded yummy. I made 2 pieces for each person, but the kids asked for more. Next time, I'll have to make more. Photobucket Pioneer Woman's Cinnamon Toast
  1. Smash 2 sticks of softened butter with a fork.
  2. Add 1 cup of sugar to the butter.
  3. Add 2-3 teaspoons of cinnamon depending on your tastes.
  4. Add 2-3 teaspoons of good vanilla (Mexican).
  5. Stir it all together until it is creamy. 
  6. Spread a good tablespoon of the mixture onto each piece of bread.
  7. Put on a cookie sheet and bake at 350 for 10 minutes .
  8. After the 10 minutes, turn on the broiler for a couple of minutes. Watch carefully b/c you don't want to burn it.

Fun Friday - Mary Lee's

In my somewhat menu plan, I've planned for Friday morning breakfasts to be Fun Fridays. This would be where we would have "fun" breakfasts...such as donuts, egg in a holes, monkey bread, etc. This Friday we had to go to Walmart so we got donuts at Mary Lee's. Everybody got to pick one special thing and they each got a glazed donut and a chocolate milk. As soon as we came in, the lady changed it to the Disney Channel for the kids so that's what they're looking at.

Homemade Kolaches

or pigs-in-blanket...whatever you want to call them
We used the following to make them:

I cut this up into 16 pieces.
Luke has been really interested in helping with breakfast since he helped Aunt Lauren.
After the last time we made these, he said we should have added cheese.
He said the cheese is what makes it a kolache and not a pig-in-a-blanket.






I couldn't get this shot for some reason...I kept getting a shadow.

I think breakfast is Luke's favorite meal. He always wants more and wants to know how much is left after everyone has been served. I always make him add up the number of biscuits, cinnamon rolls, bacon strips, etc that everyone has and then subtract that from the original number to find out how many are left. Then he usually figures out how many more he & Cameron can have and still save some for Daddy :)
