Peanut Butter Banana Oatmeal Muffins

I'm always looking for recipes to use overripe bananas. We always have a bunch in our freezer. My kids don't really like banana nut bread so it just goes to waste. I've made banana pancakes a couple of times and they like them. So I decided to try this recipe below. I liked it alot, but I don't think the kids liked the texture of the oatmeal in it. I think they'll like them better if I add chocolate chips next time!

Ingredients
  • 1 cup all-purpose flour
  • 3/4 cup quick cooking oats
  • 1/3 cup packed brown sugar
  • 1 tablespoon baking powder
  • 1 cup milk
  • 3/4 cup peanut butter
  • 3/4 cup mashed ripe banana
  • 1 egg, beaten
  • 2 tablespoons vegetable oil
  • 1 teaspoon vanilla extract
Directions
  1. Preheat oven to 375 degrees F (190 degrees C). Grease 12 muffin cups or line with paper muffin liners.
  2. Combine 1 cup flour, oats, 1/3 cup brown sugar, and baking powder. Whisk together milk, peanut butter, banana, egg, oil, and vanilla. Add banana mixture to dry ingredients, mixing just until moistened. Fill prepared muffin cups 3/4 full.
  3. Bake in preheated oven for 18 minutes, until golden brown. Serve warm.

This recipe was adapted from allrecipes.com.  Other reviewers on allrecipes suggested increasing the peanut butter & banana to 3/4 cup.

Yes, chocolate chips are great in many muffins!! Most of my muffins include them and the kids love them;)
