Pies

Tonight we had pies for supper.  In the middle ages, pie shells were called coffins and filled with different kinds of meat and vegetables, or fruit and custard.  We had meat pie pie (aka breakfast casserole).  It suggested using pork sausage/beef/hamburger, and spices (sage, oregano or thyme).  I used pork sausage and sage, and of course added a little cheese.  Brown your meat and put it in the pie shell.  Mix 3 eggs, 1/2 cup milk and add spices to your liking.  Pour on top of meat.  Add cheese if you like.  Bake at 350 for 35 minutes.

For dessert, we had cherry pocket pies/pastries.Take some canned biscuits and  roll them out flat.  Take one biscuit and put in a little pie filling.  Top with another biscuit and pinch together.  Stick the top with a fork to let the steam out.  Bake at 350 for 10-15 minutes.
